Spicy Zucchini and Tuna




Here's one of my all time favorite recipes that I make for myself during the day.  It's funny once you stop eating a bunch of junk food and you clean out your system you can really start to taste the different flavors in food and you find that it doesn't take a whole lot of seasonings to create something really yummy! 

Hot & Spicy Zucchini and Tuna Ingredients
1 7 oz can of albacore tuna
1.5 cups zucchini chopped (186 grams)
2 tablespoons (divided) Smart Ballance Light Butter w/Flaxseed Oil 
1/8 teaspoon ground red pepper
1 teaspoon low sodium soy sauce

Directions
Wash and cut zucchini into bite sized pieces

Put into medium saute pan with 1 tablespoon butter.  Cook until zucchini starts to get tender and can be easily pierced with a fork.

Drain tuna of canned liquids.  Cut into bite sized pieces.   Add to saute pan with remaining butter.

Add remaining butter, soy sauce and ground red pepper to the saute pan with zucchini & tuna, stir and cook until tuna is heated through. 

Serve and enjoy!
