Easy Veggie Patty Soup


 
Ok world, I'm ready to admit.... I have an addiction to Morning Star Farms Veggie Breakfast Sausage Patties!

My husband always laughs at me because I get "cravings" for these little patties and I make him buy me the big packages at Costco.  They are considerably cheaper buying them in bulk rather than smaller packages at my local grocery store.

So in my Veggie Patty recipe quest I decided to create a soup using these little delicious patties and it turned out great!  Sometimes I have it spicy depending on what type of mood I'm in, sometimes just plain.

Either way, this soup is delicious and easy to make.  And the best part?  It's tasty, quick and it's made using all of the right amounts of ingredients per the program recommendations to be my "Lean & Green" meal for the day!

Easy Veggie Patty Soup Ingredients
3 Morningstar Farms Breakfast Veggie Patties
1 tablespoon Smart Ballance Light Butter
1 cup portabella mushrooms (86 grams measured raw), chopped
1/2 cup cherry tomatoes (74.5 grams measured raw), chopped
3 stalks of celery, chopped
1 cup of organic low sodium chicken stock
1/4 teaspoon salt
1/8 teaspoon ground red pepper (optional)

Directions
In a medium saute pan combine your celery, mushrooms, tomatoes and Smart Ballance Light Butter and cook over medium heat for about 5 minutes, or until celery starts to soften.

Place your Morningstar Farms Breakfast Sausage Patties on a plate and place in the microwave for 45 seconds.  Remove and cut into bite sized pieces and add to your saute pan.  Continue to cook for 5 minutes over medium heat so that veggie patty bites can cook all the way through.

Add your chicken stock, salt & ground red pepper to the saute pan and cook until it comes to a boil.

That's it!  Easy-peasy :)

Lean & Green Meal counts: 3 servings vegetables, 2.5 condiments, Leaner Meatless Option w/ 1 healthy fat added + 1 optional snack for the day.
