Baked Veggies with Garlic & Red Pepper Flakes

I have completely fallen in love with veggies cooked in the oven!  They come out with the perfect amount of crisp and aren't mushy from boiling in water.  The down side is that they take a bit longer to cook (especially since I use frozen veggies for this recipe), but if you're cooking a meat with them then you can put everything in the oven and just let it cook while you are busy doing something else.  That part I do love!



Baked Veggies with Garlic & Red Pepper Flakes
2 cups frozen broccoli
1 cup frozen corn
10 stalks fresh asparagus, cut into bite sized pieces
1/4 cup chicken stock/broth
1/8 teaspoon ground black pepper
1/8 teaspoon red pepper flakes
1/8 teaspoon garlic salt
1 tablespoon minced garlic

Directions
Pre-heat your oven to 400°.

Put a large piece of foil onto a baking sheet and place your frozen veggies on it.

Mix together your chicken stock, ground black pepper, red pepper flakes, garlic salt & minced garlic and pour over the mixed veggies. 


Fold the sides in on the foil and create a long pouch that the veggies can cook in. 


Cook in the oven at 400° for 30-40 minutes or until broccoli is fork tender. 

When your veggies are done cooking you can add 1 tablespoon of Smart Ballance Light Butter w/Flaxseed Oil if you want a little bit of a buttery taste!

Serve and enjoy!
