Skip the potatoes... Zucchini Breakfast Scramble!


I'm only on day 2 of my Cleaner Healthier Eating and already I feel so much better!  I just can't believe how much the food I've been eating has been affecting my body.  When I woke up this morning I knew I wanted to make day #2 successful so I decided to start it off with a good breakfast.  It's amazing how good food can taste when you keep it simple and cut out the crap! 


Skip the potatoes... Zucchini Breakfast Scramble
2 teaspoons sesame oil
1/4 yellow onion, chopped
1/2 red bell pepper, chopped 
1 garlic clove, minced
dash of sea salt 
dash of red ground pepper 
1 large zucchini, sliced into bite sized pieces 
3 brown organic eggs, lightly beaten
2 tablespoons organic salsa 

Directions
Add 2 teaspoons of sesame oil to a large skillet and heat over medium heat.  Add your onion, red bell pepper, zucchini, minced garlic, red ground pepper & salt.  Cook until zucchini is tender and can easily be pierced with a fork.  

Push all of your veggies to one side of the pan and add your eggs to the empty side of the skillet.  Cook until the eggs are half way firm then mix the eggs and veggies together.  Cook until your eggs are done and then put everything on your plate.  Top with 1-2 tablespoons of organic salsa and enjoy! 

How I kept this breakfast simple and real....
I skipped the potatoes.  As much as I LOVE them they make me feel crappy and I get super tired when I eat them.  I also would have normally used about a tablespoon of butter (maybe more) to cook my veggies and eggs in and instead I opted for 2 teaspoons of pure sesame oil.  I did decide to add salsa at the end because I really love chips and salsa and crave it throughout the day.  I figured I'd just add 2 tablespoons to my breakfast to satisfy my craving instead of indulging later in the day and eating like 1/2 of a cup with 1/2 of a bag of tortilla chips (no joke, I LOVE my chips & salsa!). 

I consider this a breakfast success!
