Cleaner Healthier Eating Chicken Vegetable Soup



Today I'm starting a new series on Ready 2 Lose Weight called "30 Days of Transformations". Every day I'll be sharing one of my healthier recipes or a recipe from another blogger friend of mine that is healthy and yummy too! I'll also be sharing before and after weight loss stories from people just like me that have completed the TSFL program (with the help of their FREE Health Coach) and have successfully kept their weight off!

So for today's Cleaner Healthier Eating recipe I made a Chicken Vegetable Soup.  I like to make it with a little "kick" because I LOVE spicy food but you can omit the 2 spicy ingredients if that will work better for you :)  

Cleaner Healthier Eating Chicken Vegetable Soup 
(recipe makes 1 large bowl of soup - double or triple the ingredients to make as much as you need)

1 chicken breast, cooked & cubed
1 large zucchini, chopped 
4 mushrooms, chopped
1/4 yellow onion, chopped 
1/2 can of fire roasted tomatoes, chopped
1/2 tablespoon of minced garlic
1/8 teaspoon red pepper flakes (optional) 
1/16 teaspoon chipotle chili powder
1/8 teaspoon salt
1 teaspoon of Better Than Bouillon Organic Chicken 
1/8 teaspoon celery seed 
1 cup chicken broth (we use organic) 

Cooking Directions: 
Add your onion, zucchini and mushrooms to a large saute pan.  Cook over medium heat until onions are soft and translucent.  Add your fire roasted tomatoes, chicken, minced garlic, celery seed, red pepper flakes, chipotle chili powder, salt & chicken broth and stir well.  Bring to a boil, reduce heat and let simmer for 3-5 minutes.  

Serve and enjoy!
